While  I do not pretend to have all the answers, I am pretty good at asking questions.  

When you greet someone before night fall, say Buon Giorno (bwyon jurno).  This is good morning, etc. After night fall, such as walking into a restaurant, greet them with Buona sera (bwayna Sara).  Good evening. Now you are speaking like a true Italian or at least like George Clooney.
